I have the scone of your dreams!

These cheddar scallion scones are so tender and fluffy, studded with crispy bacon and bursting with flavor. You won’t want any other savory scone again!

Except maybe my cheddar and caramelized onion scones…

I’ve been in a major scone mood this year! I’ve been making these scones on repeat along with lemon scones. I even made some jam stuffed scones back in January that are to die for. And it’s March, so this fits perfectly! Saint Patrick’s Day is right around the corner.

Not that my scones are perfectly authentic by any means, and especially when it comes to a combo like this that I know and love so well…

But there is green in them! Does that count?

I’ve shared sooo many scone recipes over the years. It’s almost a tradition to share one in March these days. I was inspired by my caramelized onions and cheddar version but I just didn’t feel like caramelizing the onions. Because I didn’t have the time and let’s be real: I’d just washed my hair too. I didn’t want to smell like a caramelized onion regardless of how fabulous it is.

So I tossed in some scallions and leftover bacon and called it a day. The first time I made these was to pair with my chicken meatball orzo soup. Talk about a satisfying meal. That was a LOT! But we fell in love with these scones and ever since then… they’ve been a big request.

I make my classic scone recipe which I first shared here nearly 18 years ago. You have NO IDEA how old that makes me feel. Also, how did I start blogging when I was 10?

Anyway… that scone recipe never lets me down. I can add ANYTHING to it – be it sweet or savory – and it works.

In this case, I add in grated sharp white cheddar with the cold butter.

Then, I stir in sliced green onions and bacon.

Once the scones are patted into a nice dough round, I cut them into triangles and bake. Just a warning: your house will smell heavenly.

Just look at those flaky layers!

They bake up so nice, golden and fluffy. The scones are incredibly filling and satisfying on their own – just enjoying one for a snack is truly perfect. A great breakfast!

Ingredients

Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl combine the flour, salt, pepper, baking powder and soda. Using your fingers, a fork or a pastry blender, cut in the butter until it forms coarse crumbs. Stir in the grated cheddar cheese. Stir in the bacon and green onions.
  • Stir in the buttermilk. Stir with a spoon until a dough forms, using your hands to bring it together. Turn onto a lightly floured surface and knead gently.
  • Pat the dough in a large circle or divide in half pat each into 6-inch round circles. Brush each scone with melted butter. Place each round on the baking sheet. Cut each round into 4 or 6 slices (or 8 slices, if doing one large circle), or use a biscuit cutter to make rounds.
  • Bake the scones for 12 to 14 minutes, until the tops are slightly golden. Serve immediately.
