15 Minute Buttery Garlic Parmesan Pasta.
We all adore this buttery 15 minute garlic parmesan pasta! It comes together SO quickly, it is super flavorful and tastes like a giant hug in a bowl. The ultimate comfort food that is great for day or night. And delish!
If you only have a few minutes, you have to make this for dinner!
This buttery parmesan pasta bowl is so comforting – it is the ultimate cozy dish for any time of year. It’s packed with flavor and all the soul-warming feels. Perfect when sick, tired, bored, hungry or you just have no idea what to eat!
This is a dish that I first shared on substack last fall, back when the weather first turned cold and I was making this on repeat. It’s fabulous!
I love this meal because it’s one of those things that is SO easy, you can learn to cook with this. This is very reminiscent of what I would cook in my teen years when I was just learning how to maneuver around the kitchen and had no idea how to put anything together. Nothing with butter and pasta and parmesan can be bad either.
I was basically the queen of buttered noodles because my mom would make some variation of pasta with marinara/meat sauce once a week. And I did NOT like any tomato-based sauces, so I’d only eat noodles with butter and cheese.
Sometimes I still crave it because it’s such an easy, comforting dish. My kids love it. And it’s just so neutral, you know? It can go with anything and also works if you’re not sure *what* the heck to cook. It’s just too easy.
Now this one is a little extra special. We toast the pasta like I do in my orzo dishes. Add in garlic, chicken stock, parmesan – I basically cook it like I do these homemade spaghettios! It’s key to use a tiny tiny cut of pasta to make sure this is flawless. It works so well.
Think:
Brown butter
Mini pasta tubes
Lots of garlic
Melty parmesan cheese
Who is going to say no to that?! Not me.
This is how fast it comes together:
I melt the butter in a skillet and add the pasta, toasting it until it’s golden. This gives it SO much depth of flavor. Like a caramely, brown butter, extra savory flavor. Then I add the garlic.
Next, I add the chicken stock and let it come to a boil. This simmers for 10 minutes or so until the liquid is mostly absorbed and the pasta is tender. It it seems like there is too much liquid – don’t worry. It will be absorbed within a few minutes of sitting.
Then, I stir in the parmesan! This gives it such a rich and buttery flavor. It gets all melty and wonderful.
I also toss in a few fresh herbs for brightness.
Then just go to town and enjoy!
It’s easy, it’s cozy, it works any time, day or night. A must make!
15 Minute Buttery Garlic Parmesan Pasta

The Coziest 15 Minute Garlic Parmesan Pasta
Ingredients
- 4 tablespoons butter
- 2 cups ditalini pasta
- 4 garlic cloves, minced
- 4 cups chicken stock
- 1 cup parmesan cheese, plus more for serving
- 3 tablespoons chopped fresh parsley or basil
Instructions
- Heat the butter in a saucepan over medium heat. Stir in the pasta. Cook, stirring often, until the pasta is toasty and golden, about 3 to 4 minutes. Add the garlic. Cook for 30 seconds
- Add in the stock. Bring the mixture to a boil. Reduce it to a simmer and simmer, uncovered, stirring often, until the liquid is absorbed, about 10 to 12 minutes.
- Once the pasta is cooked and liquid is absorbed, turn off the heat. Stir in the parmesan cheese. Stir until it’s melted. Stir in the parsley. Serve immediately with extra parmesan cheese!

Just finished this and wow such a great quick meal! I used good bone broth to up the protein content! Will make again!!
Great recipe! Rocket, or as you would say, arugula, also works quite nicely for the green bit (probably a bit more than for basil or parsley).
My kids loved it! Cooking the noodles in broth made it taste extra good.
