This pistachio chicken salad is the best satisfying lunch! A tangy dressing made with greek yogurt blankets chopped dates, pistachios, juicy chicken, scallions and more. It's so delicious with crackers or on toast!
¼cupchopped fresh herbs,like basil, parsley and chives
kosher salt and pepper
2cupscooked, shredded chicken
½cupsliced scallions
½cupchopped dates
⅓cupchopped pistachios
Instructions
In a bowl, whisk together the mayo, yogurt, mustard, lemon juice, herbs and a big pinch of salt and pepper.
Add in the chicken, scallions, dates and pistachios. Toss until fully combined. Taste and season with more salt and pepper if necessary. This stays great in the fridge for up to 3 days.
